These mini pizzas are super yummy and gluten free.
4/5 large mushroom caps
Mozzarella shredded cheese
Choice of topping (we used turkey sweet Italian sausage)
1.) Cook topping if needed
2.) Pre heat the oven at Broil
3.) Remove stems from mushroom caps (we cook them on the side and munch on them)
4.) Brush olive oil on the bottoms of the caps and place on flat cookie sheet
5.) Brush olive oil on the inside of the caps (enough that you have a TINY puddle in the center)
6.) Lightly salt the mushroom
7.) Cook mushroom at broil for 8 minutes (I like a bit crispy on the edges)
8.) Take mushrooms out and place two or three table spoons full of pizza sauce on each cap (you want the insides covered but not swimming in pizza sauce).
9.) Place desired amount of mozzarella cheese on top (I use about a 1/2 cup for each one).
10.) Place topping on the pizzas
11.) Sprinkle a tad more cheese on top of the pizzas
12.) Broil for 2 and half minutes.
The kids HIGHLY enjoyed these! :)
